Peameal bacon (also known as cornmeal bacon) is a wet-cured, unsmoked back bacon made from trimmed lean boneless pork loin rolled in cornmeal creating a yellow crust. Originally, it was rolled in crushed yellow peas, hence the name peameal.
It was originally developed by a Toronto ham and bacon curer, William Davies in the 1850’s.
Try it pan fried or oven roasted with breakfast or on a bun.
